Well, @Atgxtggives the following list in another thread and lists Book of Feasts as the source:

I must be difficult to fly those falcons in the great hall though. ;)

Yes, but if you mention goshawks within earshot of Sir Hawkmoor he'll talk your ear off about the superiority of the merlin when hunting coneys after Michaelmas...

All of the courtly skills, moreover, including falconry, are heavily hierarchical. The appropriateness and detailed rules of each are constructed to expose one's social position and reinforce the power of the courtier. Only a peasant uses the wrong bird, and only a villain can't dance the courtly way...

I have actually done falconry indoors. Well, it was an owl. It was deemed too windy to do it outdoors, so we flew the owl around the function room.

No matter who you are, you look wiser if you have an owl standing on your arm.
